It’s crazy to think the days are getting shorter, the nights chillier and the back to school ads are in full swing. With that, all things pumpkin, apple and squash will soon be taking over my kitchen and this one was surely welcomed in!
I have to admit, as I student of the culinary arts (I was in chef school nine years ago and still, to this day, call myself that), I love going through recipes. It is something of an obsession. I sometimes don’t muster up the courage or effort to try certain dishes, but when things are simple and look amazing, I do! This is one.

This recipe is totally, completely, amazing. I was inspired by instagramer @MissK_J6 and her baked pumpkin oatmeal, so I tweaked it a little bit to be gluten free and better for my goals! This is a super low calorie, nutrition packed baked oatmeal that is full of fall flavors, including my current obsession, apples! I used Crispins, which are a crisp, sweet, tart apple; This time of year, go apple picking and get them fresh from the orchard!
Pumpkin Apple Baked Oatmeal
1/3 cup gluten free oats (I like Bob’s Red Mill)
1/3 cup liquid egg whites (or two egg whites)
1/4 cup almond milk
2 tsp granulated Splenda
2 Tbsp sugar free maple syrup
3 Tbsp pumpkin puree
1 tsp vanilla extract
1/4 tsp baking powder
1/2 Tbsp whole flax seeds (5 grams)
1/2 of a large apple, diced (about 100 grams)
1/4 tsp cinnamon
Preheat your oven to 375 degrees. Spray two medium sized ramekins with no-calorie cooking spray. Mix together all of the ingredients in a small mixing bowl, and divide evenly between your two ramekins, and bake for 30-35 minutes. Let them cool for a few minutes, and then top each with about 100 grams of nonfat greek yogurt, and savor this fall treat!
So the breakdown: I told you this was low calorie, right? Each ramekin contains only 175 calories of fluffy, filling deliciousness! With the yogurt on top, it still only brings it to 245 calories. I’m pretty sure it’s magic – but you’ll have to make it for yourself to see!
