Strawberry Banana Baked Protein Oatmeal
I am in love with cozy, warm baked oatmeal! This is something you can make ahead and then warm up in the mornings, making a hot breakfast possible even on hectic days. This version is also packed with protein, thanks to protein powder. A balanced, hot breakfast. This recipe serves four, but feel free to double it to last a family a couple of days.
Strawberry Banana Baked Protein Oatmeal
2/3 Cup Gluten Free Rolled Oats
2/3 Cup liquid egg whites
1/2 Cup unsweetened almond milk
4 tsp granulated Splenda
1/4 cup sugar free maple syrup
2 large ripe bananas (about 200 grams), mashed
2 tsp vanilla extract
1/2 tsp baking powder
2 Tbsp flax seeds
1 scoop Designer Whey Strawberry Protein
6 small (75 grams) strawberries, diced
If you want to put this together the night before to bake fresh in the morning, put the oats, splenda, baking powder, flax seeds, and protein powder in a tupperware container, the egg whites, almond milk, maple syrup, and vanilla in another, and the banana and strawberry in a third. If you are baking the oatmeal immediately, all you have to do is mix all the ingredients together.
Preheat the oven to 375 degrees fahrenheit.
Take four ramekins and spray with a zero calorie, gluten free non-stick spray, like PAM Original. Pour or ladle the mix evenly into the ramekins, and place in the oven when it reaches temperature. Bake for 30-35 minutes, or until slightly golden on top and it springs back when you touch it. Serve with yogurt, fruit, cottage cheese, jam, or any of your favorite toppings!
As for the break down – this is super low calorie! Only 185 calories for 1/4 of this recipe, a whole baked oatmeal! This leaves you extra room to play around with toppings and treats, plus a little protein snuck in there too. You’ll be ready to take on anything after this filling meal! Enjoy!
