Recipes of the Scale! Zucchini Lasagna with Lean Turkey (Gluten Free, Low Calorie, Low Carb)

I have recently jumped on the ‘zoodle’ wagon and have permanently ended my white pasta addiction.  Yes.  I was completely, and utterly addicted to the stuff.  For almost 11 months straight I ate it daily and it was a staple not only in my childhood, but when able to cook on my own while still at home.

This week we featured the famous zucchini as substitute for any standard pasta in this lasagna recipe from our lovely Maggie!

Play with the recipe!  I have used thinly sliced egg plant for a version of this and my kids had no clue.  I stick with the full fat cheese and use ricotta with garlic as one of the layers.

Recipes of the Scale! Pumpkin Baked Oatmeal with Apples

It’s crazy to think the days are getting shorter, the nights chillier and the back to school ads are in full swing.  With that, all things pumpkin, apple and squash will soon be taking over my kitchen and this one was surely welcomed in!

I have to admit, as I student of the culinary arts (I was in chef school nine years ago and still, to this day, call myself that), I love going through recipes.  It is something of an obsession.  I sometimes don’t muster up the courage or effort to try certain dishes, but when things are simple and look amazing, I do!  This is one.

Accolades to the SAHM

I recently had a discussion with a mom about her desire to get her life on the healthy path.  She stepped on the scale and for the first time in her non-pregnant life, saw 205 pounds.  She said she was sad, shocked, mad and… you guessed it, motivated to move towards change.  We ended up talking for almost an hour.  I have to say, as a trainer and someone still moves towards health daily, I was elated hearing the truth and pain in her voice.  And part of me, oddly enough, was reminiscent to the conversation I had with a trainer a couple years back when, I too, was at my heaviest non-pregnant weight of over 270 pounds looking for ANY hand to hold mine and help me through the first few steps.

Giving Up 2.0

A couple of weeks ago, I took the time to write about Giving Up. If you haven’t read the article, I encourage you to do so. We received a couple comments with a negative reaction to the usage of the term. Debra, had this to say::

First of all, I want to say two things:

1) I love feedback like this. I’m so honored that I wrote something that made you think about how to frame things positively. Thank you for reading Debra.
2) I love words and their impact. I will never minimize the power of words. Words can start a war, create true love, destroy relationships and establish life long bonds. It is with words that we say promise to be with someone forever in a wedding. It is with words that our parents teach us. Words can be on occasion both therapeutic and destructive simultaneously.

Sometimes, I literally obsess over vernacular. As an aspiring writer, I adore words. Today, I want to talk about this phrase: Giving Up.
