We (SW Ontarians/Canadians) wait patiently for any type of ‘picking’ season. Our long harsh winter this year was one for the books, and with berry season upon us, the itch to pick and harvest is something I have always looked forward to as a kid.
I still remember picking cucumbers with my family and bringing them home to scrub in the bathtub; ready to pickle and bottle to enjoy in the winter months, a great reminder of the hot summer days. With the ice storm that hit us this year, harvesting has been tough, however, these little gems come but once a year. Ontario Fresh Strawberries are my absolute favourite and have always looked forward to washing, trimming and getting them ready for something exciting.
My kids are around most of the summer with me this year, so I make sure I have a cool treat ready for them. So, I encourage you to do the same. Skip the $1.00 box of WalMart freezies and throw together some of these amazing frozen pops!
You can substitute any fruit of your liking, but as mentioned, this is a big moment in our household – fresh berries. Raspberries will be ready in the next week as well, I hear the currents are harvested too!
So much to do… What You’ll Need: (I suck at writing this stuff out because I don’t measure, so play with the recipe if you wish.)
- Two cups washed, trimmed and halved fresh strawberries
- A handful of blueberries
- One very ripe banana (with the heat now, our bananas rarely last two days)
- The juice of one fresh navel orange (I don’t worry about removing the seeds)
- Three TBSP of plain, full fat Greek Yogurt
- A crap load of cinnamon (probably 1 to 2 TBSP)
- 1/2 cup of full fat coconut milk
Throw them all in a blender, blend and put in re-usable Popsicle holders you can grab at the Dollar Store.
These ones are tiny, which I like. Just enough natural sugar for the kids to get them through the afternoon and all the fiber from the fruit. I inevitably have a little left over so I drink with a ton of ice and a tiny bit of my whey powder.
