Guacamole has to be one of my family’s favourite side dishes. I never make it as a condiment but as part of meal with a selection of fresh cut up veggies. I had tasted many variations of this avocado-blessed recipe, but this is a great base. The secret to keeping it from turning completely brown (if storing for a bit) is to keep the pits of the avocado in the mix until ready to serve.
This yields about two cups so if your family is anything like mine, make a double batch!
Some insider tips: I like to roast the garlic first so I add an extra clove as it’s a bit subtle; roll the lime on your counter first before juicing as it brings out more and I feel cilantro is a good add to this!
Ingredients:
2 ripe avocados – smashed
1/4 cup red onion, minced
1 clove garlic, minced
1 lime, juiced
1 ripe tomato, chopped
salt to taste
Mix together and enjoy.
